Geographic area: Vineyards located on various hills around the centre, facing south, east and west, on land entirely composed of marl soil.
N° vines per hectare: 4,500 – 5,000 with double arched-cane (cappuccina) and Guyot training systems.
Harvest: From 5 to 14 September 2013
Vinification: When fully ripe, the grapes are hand-picked in the coolest hours of the morning. They quickly reach the cellar, where the whole grapes are lightly pressed. The free-run must produced is first decanted then collected in temperature-controlled fermentation tanks. The wine remains on its fine lees for at least 6 months and is then bottled 8 months after harvesting.
Acidity: 5.5 ‰
Organoleptic characteristics: Straw-yellow colour, fine and elegant, fruity and complex. Over time it takes on a wide array of fruity aromas: peach, pear. Presents notes of wild flowers.
Pairing suggestions: Suitable to accompany starters, buffets and fish or vegetable pasta or rice dishes.
